Over the past decade, the production of rosé beef has undergone marked development. PALI Group, which includes veal slaughterhouse Vitelco, made a huge contribution to this. In comparison to ordinary, (white) veal, it primarily distinguishes itself due to its manner of production and the feed regime. The meat’s characteristic (dark) pink colour develops because during the growth process the animals are fed roughage and pellets augmented by calf milk. Thanks to its attractive pricing rosé beef is primarily suitable for catering companies, institutional kitchens and butchers. Moreover, it is easy to prepare in many different ways.

Fibre-rich feed with iron

Thanks to the large quantities of fibre-rich feed with iron, the animals maintain their natural haemoglobin levels and cannot possibly develop anaemia.

VITELRO: clear and recognisable

Unfortunately, the sales descriptions in the EU member States are not the same. In the UK 'beef' is used for meat from calves between 8 to 12 months in age.

The Dutch government has opted for the name rosé veal, while in the UK the name 'beef' is used for meat from calves between 8 to 12 months in age. In order to prevent confusion, Vitelco uses the name 'VITELRO' for this category in every language. In the Netherlands, the brand names 'Friander' and 'Weylander' are also used.
All Vitelco products are clearly recognisable as such. Alongside stating ‘Category Z’ on the label, the packaging (boxes, buckets) for VITELRO veal products use a recognisable, purple colour scheme.

Category Z: between 8 to 12 months

Meat of bovine animals between 8 and 12 months old is classified in category Z. The sales description in the United Kingdom is 'beef'.

Since 1 July 2008, the European Union uses a compulsory definition for veal which distinguishes two categories:
• Category V: slaughter age up to 8 months old, and
• Category Z: slaughter age between 8 to 12 months.

The sales descriptions to be used for both categories have been laid down for all member states whereby national traditions were taken into account. In some countries this solely concerns white veal. In others, such as the Netherlands, both white and rosé veal are currently sold as ‘veal’ which can lead to confusion. Especially because white and rosé veal differ in flavour, tenderness and colour.
Implementing the veal definitions and the names for the two different products should lead to more clarity for consumers concerning which product they are dealing with. A major difference between the two categories is that the weight of the parts of Category Z are heavier.
