In Mediterranean countries kids’ meat has been a delicacy for decades. Interest is now on the rise in the Western Europe. Distinction in slaughter age

There are two distinctly different goat meat products: kids’ meat, from kids (5-6 weeks old), and goat meat, from mother animals.

The low fat content of Dutch kids’ meat makes it easy to prepare and that provides countless opportunities for culinary creations. Juicy, tender meat should stay that way after being prepared and this means it should be cooked slowly, at low temperatures, using a lot of liquid (wine, stock, olive oil, lemon juice, etc.).

Goat meat: attractively priced

Thanks to the large quantity of roughage and grains, goat meat has a different consistency than kids’ meat. The older the animal becomes, the more the consistency changes and the more distinct the flavour.

To fully appreciate the meat it should preferably be prepared rare. Precondition for this being that the meat has to stay soft and this can be achieved by ripening it before preparation.
