The characteristic dark pink colour of young beef is a result of the roughage and concentrates that the calves are given, supplemented with calf milk. This also results in a somewhat heavier meat.
Aged between 8 and 12 months, the veal calves are older than the calves that Vitelco purchases for rosé veal. Young beef is favourably priced and is therefore popular among catering companies, industrial kitchens and butchers. It is also highly versatile and easy to cook.
