Veal cuts

The carcass in the illustration at right is subdivided into five main groups:

  • Hinds
  • Top bit and rump
  • Chine / ends
  • Forequarter
  • By-products

There are several cuts per main group. The cuts are numbered using a 4 digit code. The first figure indicates the type of animal (3: calf).The second indicates the main part (technical part). The main parts give rise to the various cuts which are indicated using the last two digits.
Example: 3221
3 = calf
2 = top bit and rump
21 = Topside, cap-off
