Veal cuts
The carcass in the illustration at right is subdivided into five main groups:
- Hinds
- Top bit and rump
- Chine / ends
- Forequarter
- By-products
There are several cuts per main group. The cuts are numbered using a 4 digit code. The first figure indicates the type of animal (3: calf).The second indicates the main part (technical part). The main parts give rise to the various cuts which are indicated using the last two digits.
Example: 3221
3 = calf
2 = top bit and rump
21 = Topside, cap-off
You can look for the desired cut by clicking a main group in the illustration. You can also look for cuts using the search engine using their code or a keyword.
