Up to eight months oldMeat of bovine animals up to 8 months old is classified in category V. The sales description in the United Kingdom is 'veal'.Since 1 July 2008, the European Union uses a compulsory definition for veal which distinguishes two categories:
The sales descriptions to be used for both categories have been laid down for all member states and national traditions were taken into account. In some countries this solely concerns white veal. In others, such as the Netherlands, where both white and rosé veal are sold as ‘veal’ this can lead to confusion. Especially because white and rosé veal differ in flavour, tenderness and colour. |
