This assessment takes place on the basis of standard selection criteria including general health, age, meat content, sex and weight. The specially selected calves are housed in groups by the farmer which promotes natural herd behaviour. A meticulous feeding programme and controlled, individual care contribute to creating optimum conditions for calf development.

All the data pertaining to an individual calf is registered and linked to the animal’s unique identification & registration number (I&R). Up to eight months old

Meat of bovine animals up to 8 months old is classified in category V. The sales description in the United Kingdom is 'veal'.

Since 1 July 2008, the European Union uses a compulsory definition for veal which distinguishes two categories:

  • Category V: slaughter age up to 8 months old ('veal'), and
  • Category Z: slaughter age between 8 to 12 months ('beef').

The sales descriptions to be used for both categories have been laid down for all member states and national traditions were taken into account. In some countries this solely concerns white veal. In others, such as the Netherlands, where both white and rosé veal are sold as ‘veal’ this can lead to confusion. Especially because white and rosé veal differ in flavour, tenderness and colour.
Implementing the veal definitions and the names for the two different products should lead to more clarity for consumers concerning which product they are dealing with.

Cuts

Around the world, Vitelco supplies client-specific products of standard quality and quantity. Technical parts are cut and packaged on the basis of client specifications.

Non-standard cuts can be requested alongside the standard ones. Deboning and packaging is carried out fresh and every day with varying cuts. Larger volumes of the desired cuts are also possible.
For foodservice and retail Vitelco can provide portioned delivery (vacuum pack or skin pack).
